So far, 2016 has been amazing. I’ve starting eating healthier and of course that means I’m feeling lighter and I have more energy. It really is amazing how much better I feel (body, mind, heart, and soul) when I fuel my body with food that nourishes me.
And I love my new partnership with Whole Foods. It has truly elevated how I eat and how I think about food. Today, I tried their Overnight Oatmeal, which is part of Whole Food’s new FIT line of prepared foods.

I’m going to try the overnight oatmeal. Currently, I enjoy honeynut cheerios with almond milk, low-fat yogurt with berries and honey and egg white omelettes with tomatoes and spinach. Some days, I make a green smothie for breakfast.

I love overnight oatmeal. I’ve been preparing it that way for a few years now. It is so much tastier. I’m glad to know WFM carries it. I will check it out next time I’m there.

Overnight oatmeal with a combo of things–oasts, almond milk, chia seeds, ground flax, 1sc protein powder, goji berries and fruit (either raspberries, blueberries or banana).

Lately, I’ve been making pancakes in the evening and then heating them up in the morning. I’ve been adding different flours, and adding oatmeal that I ground in the food processor is a nice add. I made a version with gingerbread spices, another with cocoa and peppermint! also of course whole grain flours, flax seed, hemp hearts, you name it. I like letting the batter rest for at least 8 hours, it makes a nice texture for the pancakes. I’m psyched about the 365 sale coming up, I love so many of WFM’s 365 products.
I just have a protein shake with a banana for breakfast. I never wake up hungry, but I need something before I go to work.
I love a ½ cup cottage cheese and a sliced banana and some blueberries that I defrost from my garden. In the summer I skip the banana and add melon. I do make oatmeal on the stove top. In a real rush,if I have to eat in the car, it is peanut butter on toast. BTW, I am a big fan of Whole Foods. I only buy organic. My oncologist suggested it!

my favorite easy and healthy breakfast are smoothies! i make chocolate – peanut butter – banana smoothies with lots of chia seeds, spinach, and rolled oats. it keeps me full, it’s fast and portable, and i’m able to sneak some greens into my chocolate 🙂
I love having omelets in the morning. They are easy to make and I use different combinations for the insides.
Aside from oatmeal and fresh fruit I also like scrambled eggs with cottage cheese and apple vanilla greek yogurt pancakes.
I love soft boiled eggs and toast, never gets old for me 🙂
